Artisan Sourdough Bread:

Ingredients:

- 500g bread flour

- 350g water

- 100g active sourdough starter

- 10g salt

 

Instructions:

1. In a large mixing bowl, combine the bread flour and water. Stir until a shaggy dough forms. Cover and let it rest for 30 minutes (autolyse).

2. Add the sourdough starter and salt to the dough. Mix well until fully incorporated.

3. Perform a series of stretch and fold techniques every 30 minutes, for a total of 4 sets.

4. After the final fold, cover the dough and let it rise at room temperature until doubled in size. This may take 6-12 hours, depending on the temperature and the strength of your starter.

5. Preheat the oven to 450°F (230°C) with a Dutch oven inside.

6. Carefully transfer the dough into the preheated Dutch oven. Slash the top with a lame or a sharp knife.

7. Bake with the lid on for 30 minutes, then remove the lid and continue baking for another 15-20 minutes until the crust turns golden brown.

8. Allow the bread to cool on a wire rack before slicing.
